Life's a Peach: Savor the summer with this easy peach recipe

Peaches are at their peak in August and rank among my top favorite flavors of summer.  They're a tasty treat on their own but with the addition of a few simple ingredients you can create a seasonal compote to dress up everything from ice cream, yogurt and baked brie to grilled meats and poultry.  Don't let the season pass you by without enjoying this easy peachy recipe!  

Amaretto Peach Compote
1 lb ripe but firm peaches, pitted and quartered
1/2 cup water
1/2 cup sugar
1/2 cup amaretto (or brandy or fruit juice)

Combine all ingredients in a small saucepan.  Bring to a boil.  Reduce heat and simmer on low 15 minutes or until fruit is softened but still holding its shape.  Transfer fruit to a bowl using a slotted spoon.  Turn heat up and simmer remaining juices until reduced by half.  The goal is a nice syrupy consistency.  Return fruit to sauce stirring gently to coat.  Cool.  

Store cooled compote in a jar or container with tight fitting lid.  Refrigerate until ready to use.  

Tip:  When serving add a complimenting garnish or two like toasted almonds, pine nuts, or crushed amaretti cookies, and fresh herbs like mint, basil, rosemary or lavender. 

Variation:  Substitute cherry plums for for peaches.  They're amazing!
