Comfort food, junk food, cereal, take-out, soggy fries.  Quarantine has been rough. It’s been stressful, boring and way to easy to eat all (the wrong things) day and night. It’s not surprising that there’s been a tremendous increase in the purchase of processed foods and snack foods over the past couple of months.

If your eating habits have gone off the rails and your pantry is packed with processed food, you’re not alone. We're not judging because we’re right there with you. If I’m being honest the thought of putting on a bathing suit right now makes me want to barf! So lets put those pantry items to use and get back on track.

Got beans? Good! They’re a win-win because they’re loaded with protein and fiber, the combination of which can make you feel fuller with fewer calories, so you start to burn fat. Here are a couple of feel-good recipes to try that are perfect for your waistline and the warming weather.

Mediterranean Mackerel Salad - This recipe calls for wild mackerel and cooked grains or chickpeas but canned tuna or salmon and any canned beans will work just as well.

White Beans and Arugula Salad with Sausage - Try this with a lean, preferably nitrate-free turkey or chicken sausage.

Wasabi Salmon Burgers with Edamame-Cilantro Pesto - This is a good use of canned salmon and frozen edamame. You can substitute an egg for the tofu in this recipe.
