I made these little “Love Bites” this week as a special treat for our meal delivery clients and the response has been off the charts. The funny thing is it’s one of the easiest things I’ve made for them, which reminds me that sometimes it’s the simple things that give the most joy.

Or maybe it’s just that dark chocolate is one of the best things on earth!

Here’s my easy 2-ingredient recipe to show the love this Valentine’s Day Weekend. Best of all, they’re heart healthy and there’s a good chance that you already have these ingredients on hand.

I don’t have precise proportions because I just eyed it up. Sorry bakers. I know you like precision. But don’t worry. You cannot mess this up!

A lot of our clients have nut allergies and are on low sodium diets. So I made them with just fruit and nuts. But I’ve listed a couple of optional ingredients that will really take them over the top.

LOVE BITES

High quality dark chocolate
Dried fruit - any kind and any combination

Nuts - any kind (optional)

Coarse sea salt (optional)

Line a mini muffin pan with mini muffin papers. Chop fruit and nuts reserving some for garnish.

Melt desired quantity of dark chocolate over low heat in a double boiler or in the microwave following package instructions. (I melted about 1 1/2 cups dark chocolate chips for 24-cup pan.)

Spoon about 2 tsp of chocolate into each cup. Top with a sprinkle of dried fruit and nuts, if using, then spoon additional chocolate over top to cover the fruit & nut filling to cover. It’s okay if a little bit is peeking out. Garnish with reserved fruit/nuts. Sprinkle with sea salt (optional).

Chill until firm, approximately 20 minutes.

Keep them all for yourself or package them up in cute little Valentine’s boxes or bags and ding-dong-ditch them at the homes of whomever you want to show the love!
